By now you all know that I like to cook when I can but keep it simple and pretty! Today we are going to have a nice smoked mackerel and avocado one of the easiest quick salad recipes!

I often go to the Union Square Farmers Market and look around to see what’s fresh that day. Depending on what’s available, I try to make something quick and easy. Another fun place to wander around and check for ingredients is the Chelsea Market.

I found this smoked mackerel which sounded yummy for fall, but since I’m still trying to hang onto the last drops of sunshine from summer, put it with a salad:)

For this fast and fresh no cook Smoked Mackerel and Avocado Quick Salad recipe, here’s what you need(serves 2):

Salad:

1. Smoked Mackerel 3 filets ( you can substitute with other smoked fish if you prefer or can’t find smoked mackerel)

2. 2 slices of a red onion

3. Mixed baby leaf salad

4. 2 Avocados

5. 2 Endive leaves for decoration

6. 2 chives to garnish

7. 2 sprigs of parsley

For the simple vinaigrette sauce

1. Olive Oil

2. Apple Cider Vinegar

3. Salt

4. Pepper

5. 1 sprig parsley

To make the salad you start by taking your mixed greens and placing it into your 2 medium size salad bowls. Line it to about the middle of the bowl.

Half the Avocado and cut into slices. Place one avocado sliced in each bowl on top of the mixed greens.

Diagonally cut the mackerel filet into smaller pieces placing about one and a half of each filets in each bowl on top of the mixed greens and avocados.

Finely chop the onion slices and sprinkle into the bowl.

Finely chop the parsley and sprinkle on top.

For the edible garnishing, take 1 endive leaf for each bowl. Cut and half, and place upright on the edge of the bowl. Cut each of the chive sprigs in half. Place 2 of chive halves in each bowl next to the endive.

Sauce

The sauce is really easy too. In a small bowl, pour about 7 tablespoons aprox of olive oil. Add a dash of apple cider vinegar. A few sprinkles of salt and a dash of black pepper. Finely chop a sprig of parsley and sprinkle on top. Stir the mixture together and your ready to go!

Serve with your favorite bread.

So that’s it everyone, it takes about 10 minutes to make.
